Y'know what?

In case anyone, for whatever reason, might be remotely curious, the following is a list of symptoms for hypothyroidism.

  • Fatigue
  • Sluggishness
  • Increased sensitivity to cold
  • Pale, dry skin
  • A puffy face
  • Hoarse voice
  • An elevated blood cholesterol level
  • Unexplained weight gain
  • Muscle aches, tenderness and stiffness
  • Pain, stiffness or swelling in your joints
  • Muscle weakness
  • Heavier than normal menstrual periods
  • Brittle fingernails and hair
  • Depression

A... number of these apply to me these days. So you know what?

SCREW THE POSSIBLE THYROID DISORDER.

I took a NAP.

I am TURNING UP THE HEAT.

And I am making COOKIES*.

Am so tired of being tired and cold and feeling constantly like I'm depriving myself.

*Cranberry Oatmeal, and I'm feeling generous so I'mma share the recipe!

1 cup butter
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 tsp pure vanilla extract

1 1/2 cups flour
1/2 tsp salt
1 tsp baking soda
t tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground cardamon (DO NOT LEAVE THIS OUT, IT MAKES ALL THE DIFFERENCE)
3 cups rolled oats
1 cup dried cranberries (or other dried fruit of your choice)

Preheat oven to 350 degrees F

Cream butter and sugars until fluffy. Add eggs and vanilla. Beat like a redheaded stepchild.

Combine dry ingredients. Add to butter mixture and stir well until blended. Fold in dried fruit. (Or, you know. Just stir. I won't tell.)

Drop by teaspoonful onto parchment-covered baking sheet. (Obviously I mean normal teaspoons, not measuring teaspoons here. Otherwise those'd be teenytiny cookies. Like... crouton-cookies.)

Bae 10-12 minutes or until golden.

ENJOY WITH MILK.
